Steel Cut Oats | v
I am always super late with all the new trends, and to be honest, most of the time I don’t even care about them. But sometimes things can catch your attention and after seeing it several times in different places, you know that you just have to try it. Sooner or later. It happened to me quite recently, a new food trend I had seen all over the Internet. Fellow bloggers shared recipes for how they make this ”new” version of oatmeal called steel cut oats, and I was tempted to try it. But you know how it is, you think about trying it, then you forget to buy the ingredients every time you go shopping and then you’re just like, ”meh, I guess I don’t wanna try it that much after all”. So you forget about it until you one day, when you look for something completely different, find the key ingredient right in front of you. So you buy it after all because it’s meant to be or something?
This happened a couple of weeks ago. I was running into the supermarket to buy 2 kg organic rolled oats. Where we live, only one store has this big pack of oats (we eat a lot of oatmeal so we need big packages hehe), and when I went down the aisles looking for my oats I found a bag of steel cut oats. Just like that. So I bought them and then went straight home to try them out. And yes, I forgot to buy that 2 kg package with rolled oats. Oh well.
I had no plan whatsoever to style and photograph this first bowl of steel cut oats, but after finding out that we had a perfectly ripe mango + some deep red raspberries in the fridge I decided to snap a few photos after all. And after tasting it I decided that it was blog post material. I know that you guys love simple recipes, especially breakfast recipes, so I hope that you’ll like this one too.
As with oatmeal and all other porridges, having a ton of toppings is key. And adding spices to the porridge too. A grey-ish serving of oatmeal without toppings and with no particular flavor is just boring if you ask me. What you need to succeed is fresh or frozen berries, fruits, nuts, seeds, nut butter, and cardamom. Well, cardamom is optional, but I’m a firm believer that everything’s better with cardamom so that’s why I’m adding it to the list as well. To finish off, you need some sort of plant-based milk. I almost always use oat milk, basically because I think it’s perfect together with oats, and because I’m allergic to all kinds of nuts except cashews. But you use what you prefer of course. Steel Cut Oats
serves one
1 dl steel cut oats
2 dl plant milk
1 dl water + more if needed
1/2 tsp cardamom
1/2 tsp maple syrup
pinch of Himalayan salt
To Serve
Berries
Fruits
Nuts & seeds
Nut butter
Plant milk
Directions

Combine oats, milk, water, cardamom, maple syrup, and salt in a small saucepan.

Bring to a boil, then lower the heat and let cook for about 6-8 minutes.

Top with berries, nuts, seeds, nut butter, and fruits. Add a splash of plant milk and enjoy your yummy breakfast.
